Chicken Salad

One of my favorite things to make with leftover chicken is chicken salad. I will sometimes buy a rotisserie chicken from Sam’s Club just to make this salad (or another one of my favorites – still to come). I begin up cutting up the chicken into diced pieces. This recipe calls for four cups of diced chicken. Then I start adding the ingredients. I found this recipe on Food Network and have tweaked it some since. Below is my tweaked recipe. Ingredients
4 cups cooked diced chicken
1 stalk celery cut into small pieces
1/4 cup diced onion
1/2 – 3/4 teaspoon dill weed or dried dill
1 cup mayonnaise
2 teaspoons lemon juice (I used bottled)
1 teaspoon Dijon mustard
1/2 -3/4 teaspoon salt
freshly ground black pepper to taste
OPTIONAL – red grapes sliced in half (use as many as you’d like)
Mix all ingredients and serve on bread, pita, croissant, or lettuce leaves.
I LOVE chicken salad!
This is a good one. I sampled one at Sam’s Club today (which wasn’t as good) and then had a craving!
Sams club kills me. The samples are all so good. My new favorite is mango salsa delicious
