New Healthy Dishes at the Rusty Bucket

The Rusty Bucket continues to be one of my favorite restaurants because of their wide variety of great tasting food. Recently, several new healthy dishes were added to the Rusty Bucket menu. These options are great for those of us trying to eat healthy or lose weight.

One of their new dishes is Citrus Roasted Salmon and the Rusty Bucket was kind enough to share their recipe with us! If you are a salmon lover, I understand this dish is delish! Check out the recipe below, or if you’d rather, head to a Rusty Bucket near you to have it made for you!  

New Healthy Dishes at The Rusty Bucket

Citrus Roasted Salmon Recipe 
Single Serving
7 oz. salmon filet
1 oz. olive oil, 90/10 blend
¼ oz. butter, garlic-parsley
½ tsp. salt
½ tsp. pepper
6 asparagus stalks, blanched
1 oz. citrus vinaigrette
¼ tsp. parsley, chopped

Directions: 

1. Season salmon with salt and sear in hot sauté pan until lightly browned. Finish in a 350 degree oven until medium, approximately 6-7 minutes.
2. Sauté asparagus in garlic butter.
4. Place Quinoa and Farro Salad one side of the plate and asparagus on the other side of the plate.
5. Place salmon on plate. Add tempered garlic butter over the salmon and then drizzle with citrus vinaigrette. 

Citrus Vinaigrette 

2 oz. fresh squeezed orange juice

2 oz. fresh squeezed lemon juice

2 oz. fresh squeezed lime juice

6 oz. golden balsamic vinegar

1 ½ c. Dijon mustard

1 tsp. Kosher salt

½ tsp. shallots, minced

12 oz. olive oil/canola oil blend

Directions: 

  1. Juice all citrus and strain.
  2. Add citrus juice, balsamic, shallots, mustard and seasoning to blender.
  3. Slowly add oil until emulsified.
  4. Chill and serve
