Loaded Baked Potato Soup
This milk based soup incorporates prebaked potato cubes with crumbled bacon, cheddar cheese, and sour cream. You can either cook potatoes for the purpose of this soup or use leftover baked potatoes. When I made this soup tonight, I peeled and cubed the raw potatoes then cooked them in the microwave in a microwave safe bowl. This soup is fairly easy, the most time-consuming part is cooking the bacon and preparing the potatoes. Both of these steps can take place anytime before putting together the soup.
Ingredients:
12 slices of bacon
1/2 cup margarine (1 stick)
2/3 cup flour
7 cups milk
4 large baked potatoes, peeled and cubed
1 1/4 cups shredded cheddar cheese
2/3 cup sour cream
1 teaspoon salt
1 teaspoon ground black pepper
Directions:
1. Place bacon in a large skillet to cook until browned and crispy. Â Drain the grease and allow it to cool before crumbling.
2. In a deep saucepan, melt margarine over medium heat. Whisk in flour until smooth. Gradually whisk in milk stirring until thickened. Stir in potatoes, then bring to a boil.
3. Reduce heat and simmer 10 minutes. Stir in bacon, cheese, sour cream, salt and pepper. Continue cooking until cheese is melted.
